Ok, I'm taking the plunge! I'm going meatless for a month. Ok, let me rephrase - I am going to TRY and go meatless for a month. It's going to be hard, especially since there are cookouts coming up that *I* am hosting, but that also means that I can prepare yummy, meatless munchies for myself to enjoy there. ;)

As I've said before, I'm just not digging meat products lately. After reading a lot at HelloVeggie and other sites, I'm excited about this little "test" I'm giving myself, and hoping it turns into a lifestyle that will continue on. (a nice bonus will be if I can drop about 20 lbs before beach time...but I won't hold my breath for that)

Wish me luck!

David and I went meatless for a month a few years ago. He was doing it for health reasons. He had just read Fast Food nation. I went along for the ride. I don't think the kids caught on. It was challenging but we did it. David went back to meat and I can't see my son being a vegetarian. Daughter - maybe. Afterwards though I did start buying organic, grass fed beef and organic chicken. It's a little more expensive but we feel strongly about it.
Good luck. I look forward to your updates.

Hi Mel,
It is commendable that you are making this commitment as it becomes increasingly apparent that there is a connection between reducing meat intake and improved health as well as lowered environmental impact. Meatless Monday, a nonprofit health initiative, is dedicated to encouraging cutting meat for these very reasons, and it makes going meatless, at least one day of the week, an enjoyable experience. The website is rich with various meatless recipes, cooking tips, and nutrition facts that may make your month as an herbivore easier (and more delicious!) than you anticipate. I recently began working as an intern with Meatless Monday and my family is thrilled to be benefiting from my renewed passion for cooking, from the Meatless Stuffed Peppers for a more festive feel (http://www.meatlessmonday.com/site/PageServer?pagename=recipe_dinner_070115) to the simple but satisfying Grilled Gazpacho Sandwich (http://www.meatlessmonday.com/site/PageServer?pagename=recipe_lunch_070618).
I hope your meatless month is a good one and that you find www.meatlessmonday.com to your benefit!
Best, Ashwini
